The whipping cream dispenser is one of our favourite pieces of equipment. It can create a wide variety of foams as well as infuse liquids and foods and carbonate anything with water in it. It works by pressurising a canister filled with liquid or food with nitrous oxide (N2O) or carbon dioxide (CO2) and then either dispensing it out a nozzle or venting the gas and using the liquid by itself.
